Re: Category subscriptions - if I understand your question correctly, here's the behavior as I understand it:
If you have a pre-existing board subscription, and then go up a level or two to the category it's contained in, and subscribe to the category, the category subscription will now take precedence over the board subscription and supersede it. This means, that if at a later date, you decide unsubscribe from the category, the old board subscription won't come back automatically.
Oh, and editing to add - this is what a category subscription looks like in your subscriptions:
Clicking the "X/Y boards" link launches the category subscription modal.
