Did you ever get any feedback on this or a solution. I was just looking at the possibility of doing the same exact thing. We'd like to be able to create a form for users to fill out and it send from the Community default email address to a specified email address.
To have the community application be responsible for sending these emails would require customization beyond what's currently possible in Lithium Studio, and thus would need to involve the Lithium Professional Services team. If you're interested in pursuing that further, I would suggest submitting a case via the Customer Case Portal so one of our Solutions Consultants can better understand your needs and requirements, and can assist you on the next steps.
An alternative would be to point the form action at a resource that you host on your own web server.
