Creating and setting value for custom profile fields

We would like to create custom profile fields, and then set values for them. We were told this was possible by our Lithium contact, but I'm having difficulty finding documentation on how to do this. ...

bhupen I appreciate your suggestion. I would prefer to do this via JS and cookies, but our Legal team would prefer this value be stored in a custom field value. :/
