I tried just adding graphics as you instructed (full URL of image), but it seems that Lithium does not allow for the image to be included with the notification email.

Do you want an email template that contains images (always the same), or do you want to pull the images from a post into your email notification?

I've received notification with images in ... so I assume that's possible to do it.
My guess is that the notification template pulls the entire message. Have a look at the context object and try to add anything that could pull the message content. And give it a go on stage!
