By default our instance has an "escalate" button. What is the purpose of this?
Also, how can I switch this off in the admin config if we don't want to display it?
Escalation would not affect the normal users. To enter in admin section you will need the admin access. But you can set the email id for any of your team members who will get the escalation emails.

You can play with setting in Admin > Mod Tools > Escalation.
